When it’s cold outside, how do you warm yourself up?  Most people bundle up with heavy jackets, fuzzy mittens and thick scarves, but if you’re looking for a more delicious way to get warm, cooking yourself a hot dinner will do the trick, too.  Soup, chili and casseroles are all excellent examples of hot and hearty comfort foods that warm you up from the inside out, but the most popular cold-weather comfort food would have to be macaroni and cheese.

 

This recipe for Easy Chili Mac and Cheese is perfect for those lazy nights where all you want to do is curl up on the couch and stay out of the cold.  It only uses four ingredients, so making it definitely won’t break your budget, and it takes just 20 minutes to make from start to finish.

 

Mac and cheese is comforting enough on its own, but add chili to it and you’ll never want the traditional version again.  Plus, since a serving of this cheesy goodness is less than 400 calories, this is one comfort food meal that you won’t have to feel guilty about eating.  Enjoy!

 

Easy Chili Mac and Cheese

Prep Time: 20 min Total Time: 20 min Serves: 6 (1 cup each) Calories per Serving: 392

Ingredients

8 ounces dry elbow macaroni, uncooked

1 15-oz can Wolf Brand Chili No Beans

1 10-oz can Ro*Tel Mild or Original Diced Tomatoes & Green Chilies, drained

1 8-oz package pasteurized prepared cheese product, cut into cubes

Cook macaroni according to package directions, omitting salt.  Drain and return to your pan.  Add chili, drained tomatoes and cheese to the cooked macaroni; cook over medium heat for 5 more minutes or until the cheese is fully melted, stirring occasionally.
