Party Appetizers: Chorizo Stuffed Dates Wrapped in Bacon

Chorizo Stuffed Dates Wrapped in Bacon (Makes about 20 pieces)
20 large, pitted marjool dates
1 lb. of ground pork chorizo (recipe follows)
¼ cup minced yellow onion
1 lb. uncooked bacon
1 lb. ground pork
2 TB minced garllic
2 TB minced onion
1 cup white wine vinegar
½ cup dark chili powder
Salt and pepper to taste
Place vinegar, garlic and onion in sauce pan and bring to a boil for 2-3 minutes.
Reduce to a simmer and gradually add chili powder to form a paste, cook for 2 minutes and cool. Add mixture to pork and season with salt and pepper.
Pre-heat oven to 350 degrees.
Saute onions until caramelized, and cool.
Add onions to chorizo until well incorporated.
Begin forming small balls with the chorizo/onion mix (about ¾ inch long in the shape of a football), place on baking sheet and cook for 6-8 minutes and cool.
Cut raw bacon in half and par cook 50% (roughly 6 minutes) on a baking sheet in the 350 degree oven, and let cool to room temperature.
Slit the top of dates vertically, without cutting all the way through.
Begin stuffing dates with chorizo ball.
When complete, wrap in bacon and place on baking sheet with bacon over lap facing down. Once complete, bake in oven (at 350) until bacon is crisp (roughly 6-8 minutes).
Remove from oven and serve warm.
