As a matter of fact, the Christian Parenting Corner is fortunate to have been able to post a review of the last edition of her excellent book on healthy eating the easy way.

As a special Valentine’s Day treat for readers of Family Online Magazine, Ms. Boyd has created these wonderful Valentine’s Day signature dishes:

      Families Online Magazine’s Clever Chocolate Pudding
      • 2 T. Organic Chocolate Powder (carob powder works well too)
      • 1 Cup Water
      • 1 tsp. Vanilla
      • ¼ tsp Cinnamon
      • 10 Soaked Dates, Pitted
      • 1 T or more Agave or Maple Syrup (depending on how sweet you like it and how bitter the chocolate powder is)
      • 1 Avocado
      • 4 Sliced Strawberries

      In your food processor combine the chocolate powder, water, vanilla, and cinnamon. As the processor is running, slowly add the dates, agave or maple syrup, and the avocado until the mixture is smooth. Pour half of this mixture into long stemmed glasses and then add a layer of sliced strawberries. Then pour the remaining mixture into the glasses and garnish with a final layer of strawberries.

      Serves 2 to 4

      Families Online Magazine’s Banana Fingers

      • 4 Servings of Families Online Magazine’s Clever Chocolate Pudding
      • 4 Bananas
      • ¼ Cup Maple Syrup
      • ¼ Cup Macadamia Nuts (chopped)
      Simply slice 4 bananas on the diagonal and place them on a serving platter. Spoon the chocolate pudding over the bananas, top with the macadamia nuts, drizzle the maple syrup slowly over the dish, and watch this nutritious (and delicious!) snack disappear! If you want to make the dish look extra fancy, go ahead and decorate it by inserting a fresh piece of mint into the pudding.
