Easter Brunch Menu:

Cheese Souffle

Ingredients



8 pieces of bread cubed

5 eggs

2 cups milk

1/2 lb. cheese grated

1 tsp salt

3/4 to 1 lb. of ham cubed

Directions

Put bread cubes in 9 x 13 casserole dish, Place ham over cubed bread. Beat eggs together, add milk and salt and pepper. Pour over bread cubes. Top with cheese. Cover and refrigerate overnight. Bake at 350 degrees for one hour. Uncover casserole last 15 to 20 minutes.



Easter Egg Bread

Ingredients

1 cup flour

1/4 cup sugar

1 Tsp. salt

1 pkg. undissolved yeast

2/3 cup milk

2 Tbs. butter

2 eggs

1/2 cup flour

Dip 5 uncooked eggs in colored food dye. Set aside. In a large bowl, thoroughly mix flour, sugar, salt and yeast. Combine milk and butter in a saucepan. Heat until warm,not melted. Gradually add to dry ingredients. Beat 2 minutes with an electric mixer at medium speed. Add eggs and beat for 2 minutes at high speed. Stir in additional flour, ( 3/4 to 1 3/4 cups flour) to make a soft dough. Turn out on to lightly floured board. Knead 8- 10 minutes until smooth and elastic. Place in a greased bowl, turning to grease the top. Cover and let rise in a warm place until double in bulk, 1 hour. Punch down dough.

Divide dough into two equal balls. Let stand covered for 10 minutes. Roll each ball out into a long roll about 36 inches long and 1- 1 1/2 inches thick. Using the additional 2 long pieces of dough form a loose braided ring, leaving sp for the 5 colored eggs. Place on a buttered 15 1/2 x 12 inch baking sheet. Place colored eggs into sp of braid. Cover loosely with a towel. Set dough aside in a warm place until double in bulk. Brush bread with melted butter and sprinkle with tiny multicolored decorations. Bake at 350 degrees for 50-55 minutes.

Fruit Salad

Ingredients



1 can chunk pineapple drained well 1 can apricots cut in half drained well



1 banana sliced

1 pint of strawberries cut in half

2 Tbs. honey

Directions

Combine fruit. Stir 2 Tbs. honey into fruit mixture and serve.
