Deluxe Potato Casserole
Ingredients
6 medium potatoes
1 tsp. salt
pinch of pepper
1/3 finely chopped onions
1 1/2 cup sour cream
1/4 cup margarine
2 cups grated cheddar cheese
2 Tbsp. butter or margarine for topping
Directions
Cook potatoes in skins until tender
Drain, cool, then peel potatoes. Grate potatoes coarsely.
Season with salt and pepper.
Combine cheddar cheese and 2 cups of margarine in saucepan over low heat until
melted and blended. Cool mixture slightly. Stir in sour cream and onions.
Fold potatoes into sauce. Place mixture into greased baking dish. Dot with butter
or margarine.
Bake at 350º for 1 hour.

Pineapple- Lime Jello Salad
Ingredients
1 cup 7up or Ginger ale
1 pkg. ( small) lime jello
1 cup drained , crushed pineapple
1 3 ounce pkg.Cream Cheese
finely chopped nuts, as desired
Directions
Dissolve lime jello in 1 cup hot water. Add 7up or ginger ale, cream cheese, pineapple and nuts. Mix well.
Place in refrigerator until firm. (I always use 7up in mine).
Baked Beans
Ingredients
two cans kidney beans
1/3 cup grated onion
2/3 cup ketchup
1/4 cup mustard
1/4 cup brown sugar
Directions
Mix all ingredients in bowl except brown sugar. Fold into baking dish. Sprinkle
brown sugar on top. Bake at 350 degrees for 1 hour.
