Pepper, Peach, Prosciutto Summer Grill
Directions
Heat grill to medium heat. Place peppers, squash and red onion on grill. Grill approximately 6-7 minutes on each side until slightly charred. Chop into bite size chunks. Mix all ingredients and place in medium sized bowl, except for ham and Parmesan. Place shaved ham on top of vegetables and then shaved Parmesan on top of ham. Every time I think of how good this was, I melt.

Ingredients
4 medium ripe peaches, (chunked with skin on, remove seed)
2 medium size green bell peppers (halved and seeds removed)
1 large squash (of any type, acorn, butternut; sliced ½ in. thick, seeds removed, skin on)
1 large red onion, (peeled and sliced ¼ in. thick)
4 garlic cloves, peeled and finely chopped (jarred garlic is ok)
½ cup chopped fresh basil leaves
1 cup shaved parmesano reggiano
1 ½ cups thinly sliced prosciutto ham
Salt to taste
Fresh ground black pepper to taste
