Pineapple Cream Cheese Torte

I don't do a lot of dessert recipes. I guess I figure if I actually get into too many dessert recipes, my waistline will hate me. This is such a refreshing way to finish a meal, or just to have all by itself. It's quick and easily put together. It is not low calorie or low fat. Sorry. We all have to splurge sometime.

  

Ingredients

Will serve approximately 6-8 people.

2- 8 oz. Packages Cream cheese (full fat tastes better)
2-1/2 cups store bought whipped cream
1-cup sour cream
1 cup chopped maraschino cherries (drained)
1 Tbsp. Maraschino cherry juice
1-1/2 cups chopped pineapple (drained)
2 Tbsp. pineapple juice
1 cup chopped walnuts
2 cups shredded coconut (reserve 1 cup)
1 cup canned mandarin orange segments (drained)
2 kiwis
1 store bought pound cake or angel food cake

Directions

In food processor or with hand mixer, mix the first three ingredients until smooth. Place the rest of the ingredients (except for cake) in a large bowl and add the cream cheese mixture. Fold together until mixed. In a large serving glass serving bowl (so you can see the layers), break apart bite size pieces of cake by hand. Place one layer of cake on bottom of bowl and then top with approx. ½ inch layer of the cream cheese, fruit mixture. Repeat layering until you run out of ingredients. The last layer should be the cream cheese mixture. Top with remaining shredded coconut. Peel the kiwi, and slice into thin circles. Place in a ring around outer edge on top of dessert.
