New Years Day Pork Leftovers

Have leftover pork from New years Day that is going to go to waste? Pork Bar-b-Que is the answer.

BBQ sanwich

Ingredients

4 cups leftover pork roast, shredded into small pieces
1 small onion, chopped finely
½ c. ketchup
½ c. tomato sauce
4 T. brown sugar
1 ½ T. vinegar
2 Tbsp. Worcestershire sauce
2 tsp. prepared mustard
2 tsp. salt
1 tsp. paprika
2 tsp. chopped parsley

 

Directions

If you have cooked your pork and sauerkraut separately, you won’t have a problem, but if you have cooked it together, try to remove as much of the kraut as possible.

Sauté onion over medium heat. Add shredded pork. Add all other ingredients and simmer about 5-10 minutes. Serve on soft, warm hamburger rolls.
