Tilapia or Flounder Free Recipes from Chef Kellie
Seared Mild Fish with Lemon, Butter, Caper Sauce
You can use any mild fish for this recipe. Tilapia or Flounder work nicely. Serve this fish with some nice steamed veggies and roasted red potatoes, or a side of pasta with Olive oil, Garlic, fresh herbs and Parmesan cheese. It's light, healthy, easy and delicious for a spring or summer evening. A good glass of wine would also compliment this meal; two glasses will make it taste even better! Serves two or three
In hot saut? pan over medium/high heat, pour olive oil. When oil is hot (but not smoking), lay fish filets in pan (they will sound like they are crackling and that's a good thing). Sprinkle with ? tsp. each salt and pepper. Sear for only a couple minutes (until you can see the fish cooking half way up the side of filet) and turn over (fish should be golden brown). Sprinkle with remaining salt and pepper and sear for another minute or two. Set aside and keep warm.
2 Tbs. Olive Oil
1 Tsp. salt
1 Tsp. fresh ground pepper
Sauce
Melt butter over medium heat (do not brown). Squeeze the juice of the lemon into butter and stir, reducing heat to medium, low. Add parsley, dill and when ready to serve, add capers last. Capers are very salty, so be sure they are rinsed and are added last.
4 Tbsp. butter2 Tbsp. capers (rinsed)
1 small lemon
? cup fresh chopped parsley
2 Tbsp. fresh chopped Dill
Serving
Place fish on plate, and spoon sauce over top. Serve with sides mentioned above.
