Swedish Meatloaf Recipes

Meatloaf. Basic, boring and mundane. Not in my eyes. Meatloaf is one of my ultimate comfort foods. Tweak it with some funky features and it's anything but boring. Check out my recipe for a Swedish Meatloaf with a twist.



You will need:

1-1/2 lbs. Lean ground beef
2 eggs
1 cup milk
1/3 cup finely chopped onion
2 Tbsp. Olive oil
1 tsp chopped garlic
1 tsp. nutmeg
1/2 tsp sage
1 1/2 tsp salt
1/2 cup oatmeal
2 cups firm (not too runny) homemade mashed potatoes

Mix all ingredients well except for ground beef. Add ground beef, mix well but not too much, this would tend to make the meat more tough. Divide meat mixture into two even amounts. Place first amount in baking pan and form into loaf. Create a well down the center of the loaf, and fill with mashed potatoes, spread evenly. Make a well in other half of mixture as forming into loaf, place this well over the mashed potatoes, to fit evenly on top of other half of loaf so potatoes do not mush out over the sides. Form meat around potatoes so none are visible. Bake at 350 degrees for approximately 1-1/2 hours. Let stand for about 5-10 minutes. In the meantime, heat together over low, the following ingredients

1 can cream of mushroom soup
1/2 cup sour cream
1 Tbsp. chopped fresh dill

Serve sliced mashed potato filled swedish meatloaf, topped with the mushroom soup gravy.
