Warm Baked Oatmeal for a Cold Winter Day

Oatmeal: the smell of it, the warmth and softness of it, not to mention the healthy benefits. Baked Oatmeal is one of my favorite winter breakfasts. It fills me up and gets me going, and that is good for any day of this cold harsh weather. Pair it up with some spiced eggnog coffee. What could be more perfect than that?

Ingredients

3 cups rolled Oats

2 eggs, beaten (can use whites only, will not be as golden brown, but works)

¼ cup vegetable or olive oil or ½ cup butter or margarine

1 tsp. baking powder

2 cups milk (can use skim)

¾ cups brown sugar (can use splenda if watching your sugar, again will not be as golden brown in color)

1 tsp. salt

**Options: nuts (pecans and walnuts are nice), spices such as cinnamon or nutmeg, dried fruits, coconut. See directions below


Eggnog coffee: Brew coffee of your choice. Buy eggnog of your choice (unless you feel like whipping a homemade batch together, this is the easiest), and pour desired amount of eggnog into coffee. Sprinkle with cinnamon and nutmeg. Top with whipped cream if desired. This is the best cup of coffee.

Directions

Preheat oven to 375 degrees. Mix all ingredients together and pour into 9 x 13 greased baking pan. Bake for 25-30 minutes until knife inserted in center comes out clean. Serve warm with extra milk or pure maple syrup on top.
