Bacon, Egg and Tomato Salad Sandwich

I love egg salad, and I love B.L.T.’s. Why not combine the two for a great
sandwich or snack?

Ingredients

1 pound Bacon
1 dozen eggs
6 ripe plum tomatoes or cherry tomatoes cut in halves (not overly ripe)
1 1/2 cups mayonaise (or more depending on your preference)
1 tsp. white vinegar
1 tsp. salt
1 tsp. fresh ground pepper
2 tsp. freshly chopped dill
2 Tbsp. fresh chopped parsely

Directions

Prepare bacon according to package directions (crispy bacon is best). Drain
on paper towels and crumble.

Hard boil eggs, peel and cool. Chop eggs into bite size pieces.

Dice tomatoes (removing seeds) into bite size pieces.

In large bowl, mix together mayonaise, salt, pepper, parsley and dill.

Add egg and bacon and then tomatoes last. Fold all ingredients
together and serve as a sandwich on some healthy whole grain bread, with
toasted pita bread, crackers, tortilla chips,or even on top of a mixed green salad.

Add other options such as some chopped red onion, sundried tomatoes, green or black olives, capers or cheeses. This could be a snack, lunch, dinner or hors d’ oevre.
