Leftover Mashed Potato, Ham
and Egg Scramble Breakfast

What to do with leftovers, once again. Christmas ham and mashed potatoes are having thoughts of being thrown into the trash or to the dog, but before you do’.one last breakfast could be in order.

scrambled eggs toast


Leftover ham, diced into small pieces
(however much you like, lets say 2 cups for a serving of 2-4 people)
Approximately 2 cups leftover mashed potatoes
1 small onion, finely chopped
6-8 eggs
Non-stick cooking spray
2-3 Tbsp. butter
2 Tbsp. chopped parsley
2 tsp. salt
1 tsp. pepper



Such an easy breakfast, but nice and tasty. Heat medium to large skillet to medium heat. Spray with non-stick cooking spray, and add the butter. Add chopped ham and diced onion, until onion starts to be translucent. Add mashed potatoes, and heat through’..to a light golden brown. Add eggs, premixed with fork, salt, pepper and parsley. And cook until eggs are cooked through, stirring all together, and scrambling eggs in with mixture. Once mixture is combined and cooked, serve with your favorite toast and coffee.
