Black Bean Mango Salad
6 Large oranges
1- 1/2 cups chopped green onion
6-7 c. cooked and cooled black beans (can use canned)
1/2 c. fresh squeezed orange juice (from above oranges)
1/4 c. fresh lime juice (4-5 limes)
1- 1/2 c. chopped red onion
2 Tbsp. Chopped garlic
2 Tbsp. Cumin
1 Tbsp. Salt
2 Tbsp. Fresh ground black pepper
1/2 c. chopped fresh cilantro
1 tsp. Powdered cayenne pepper
1/4 c. Honey
1 c. peeled and chopped avocado
1- 1/2 c. Peeled and chopped mango
12 whole cilantro leaves
Cut oranges in half.
If you have a juicer, juice them the easy way.
If not, you will have to do it by hand.
After juicing, hollow out the oranges to have 12 empty orange cups.
Slice a very small amount off of bottom of orange (be careful not to make a hole), so that the orange half can sit flat on a serving plate.
Mix together rest of ingredients except for avocado and mango.
Last, gently fold in avocado and mango (try not to mush).
Fill each orange cup with black bean salad (lightly overflow) and top each with a whole cilantro leaf.
Chill until ready for use.
These can be used for a back yard summer party with barbecued chicken or a nice cool air-conditioned dinner indoors with juicy roast pork. Best served chilled.
