Ingredients

  • 1 eggplant
  • 1 onion
  • Parmesan cheese
  • Salt
  • Pepper

Instructions

  1. Peel eggplant and dice into salted boiling water.
  2. Slice onion into the water too; cook about 20 minutes.
  3. Drain and toss with cheese, salt, and pepper to taste.
