Party Appetizer: Cheese and Onion Pies

With the festive season just around the corner and the signs of Christmas beginning to appear everywhere you look, now more than ever is the time we begin to realise just how important families are to us.
One of the great things about this time of year is the endless opportunities to fill our houses with a delectable explosion of smells, sights and tastes as we roll up our sleeves, pre-heat the oven and get to work mixing, mashing, stirring, rolling, baking and decorating!
Whilst many of us see this as a necessary chore, cooking is actually an incredibly rewarding activity that’s perfect for spending time together as a whole family. Regardless of how large or small, young or old your family is, there’s always something for everybody to do in the kitchen, whether it’s peeling or slicing, rolling pastry or even just folding the cake mix! In today’s busy world of hustle and bustle, there aren’t a lot of family friendly activities that can bring everybody together to enjoy some quality time, yet cooking does just that.
The best part is, not only will your family be spending some time together away from the stress of work, but they’ll you’ll also have something delicious to eat afterwards or to send to a party! What better way to spend an afternoon? You’re probably wondering what might be a suitable recipe which all the family can have a part in? The answer is simple cheese and onion pie! It’s healthy, hearty, delicious; and can be tweaked to your tastes! Here’s how to get everybody involved in a scrumptious evening meal.
Cheese and Onion Pies
Here’s what You’ll need:
- 3 large onions
- 25g of butter
- salt and freshly ground white pepper
- 250g mature cheddar cheese
- A splash of milk
- Ready made puff pastry roll
1)Preheat the oven to 180C (Gas mark 4/5) and place a flat baking tray inside to heat.
2)Slice up the onions carefully using a sharp knife and then warm the butter in a pan. Add the sliced onions and fry them through for about 8-10 minutes. Next, add 150ml of water and season to taste. Continue cooking until the onions are soft and most of the liquid has evaporated off. Remove off the heat and allow to cool.
3)Divide the readymade puff pastry into two and roll one side out to about half a centimetre thick and line the mini quiche or pie tray with these.
4)Take the second piece and also roll this out to about the same thickness, this piece will act as the lid eventually. Cut out 8 x 7cm circles to make tops for the pies. Lightly brush edges of the pie bases with egg.
5)Take the mature cheese and using a grater, carefully grate the 250g of cheese onto a plate or into a bowl.
6)Take half of the onion mix and spoon it out into the bowl and onto the pastry. Take half of the grated cheese and add that too. Next go back and add the second half of the onions and finally finish with the remaining cheese. This will create a layer effect.
7)Take the pastry lids and lay them on top as a lid. Pinch the edges together and trim as necessary. You can egg wash the top of the cheese and onion pie or score if you like.
8)Place the pies in the oven for around 35 minutes until golden brown. Allow to cool before removing. Then enjoying your mini cheese and onion pies!
