Now that school is back in session, making dinners that are quick, easy, healthy and delicious can seem like a daunting task.  Good news, though: finding simple weeknight recipes does not have to be difficult at all.

One of the easiest ways to get inspired for dinner is to simply go through your cupboards and combine the ingredients you already have instead of spending hours slaving away at the stove trying to come up with something difficult.  Using kid-friendly ingredients in grown-up dinner recipes, like this Pepperoni Spaghetti Bake, will appeal to both parents and kids and doesn’t take long to cook.

This spaghetti bake is the perfect dish for busy weeknights and uses ingredients you probably already have on hand.  It’s also a great recipe for cooking with kids; have them prepare the pizza dough, layer the ingredients and top the bake with pepperoni for an easy way to get the whole family involved in the kitchen.

Pepperoni Spaghetti Bake Recipe

Ingredients

· PAM® Original No-Stick Cooking Spray

· 1-1/4 cups original baking mix

· 1/2 cup reduced fat 2% milk

· 2 14.5 oz cans Chef Boyardee® Spaghetti and Meatballs

· 3/4 cup shredded part-skim mozzarella cheese, divided

· 1/3 cup sliced turkey pepperoni

Directions

1. Preheat your oven to 375°F.  Spray a 13×9-inch glass baking dish with cooking spray.  Combine baking mix and milk in a medium bowl; stir until soft dough forms.

2. Drop dough by spoonfuls on the bottom of a baking dish (it will not completely cover the bottom). Spoon 1 can spaghetti and meatballs over the dough and sprinkle with 1/2 cup cheese.  Top with the remaining can of spaghetti and meatballs, the remaining 1/4 cup cheese and pepperoni.

3. Bake for 20-25 minutes or until dough is done in the centers and browned.

Tip:  Add in your favorite pizza toppings with the spaghetti and meatballs, if desired.
