Easy Roasted Red Pepper and Goat Cheese Appetizers
Entertaining doesn’t have to be difficult. It’s as easy as assembling a few quality ingredients for an incredible taste.
You Will Need:
One loaf crusty French bread baguette (sliced into approximately 20-25, 1/4 inch round slices)
3- 5 oz. packages goat cheese(this is the quantity my grocery store sells)
1-2 jars roasted red peppers, julienned (you may have to slice these yourself, depending on what you find at the store.)
20-25 fresh basil leaves (washed)
10-12 kalamata olives, pitted and sliced in half
Toast your bread slices on a cookie sheet in a 350 degree oven until lightly browned. Let cool.
Spread approx. a teaspoon or two of goat cheese on each bread round.
Top goat cheese with fresh basil leaf, then a couple of julienned strips of roasted red pepper and finally the half of a kalamata olive on top.
These are easy, colorful, and flavorful appetizers for any occasion. Try not to make these too far ahead of time, so the bread does not get soggy. You can double or triple this recipe according to your guest size.
