Summer Appetizers Fresh and Light
Watermelon, Feta, and Mint Salad
Cube the melon and cheese before sprinkling with shredded ribbons of fresh mint leaves and a dash of pepper.
Low in fat and calories, these small appetizers pack a lot of flavor into a small space. Mix fat free cottage cheese with chopped onions, peppers, and fresh minced garlic with Italian breadcrumbs and paprika. Stuff into button mushroom caps. Slice eight small tomatoes in half and scoop out the centers. Combine one pound of pre-cooked lump crabmeat with three tablespoons of low-fat or fat free plain Greek yogurt. Add two teaspoons of dijon mustard to the crabmeat mixture and spoon into the tomato halves before sprinkling with fresh, chopped chives and a Old Bay seasoning.
Note: Water-packed albacore tuna can also be substituted for crab.
Turkey, Apple, and Brie Rollups
Liven up that lame deli tray and layer two slices of low-fat turkey on top of one another, adding a few thin slices of Granny Smith apples and brie cheese on top of the turkey before rolling up. High on protein and low on carbs and calories, this recipe can be given even more flair by adding chopped walnuts or fresh figs to the filling.
